Clean out pumpkin. put seeds in a colander. Wash really good and get all the goop off. Sprinkle with see salt before roasting. Put in a oven at 225 degrees for 25 minutes. Take out and let cool and enjoy. Temp and time may very so try a small batch first. they are really tasty and go good with a cold beverage. You can sprinkle with cajun seasoning but I like just sea salt.

Enjoy

I love them, but have never made them myself. Might make for a fun little project with the kids this year. Don't they call them pepitas when you get them from the grocery store or am i thinking of the wrong thing?

Hate to 'jack' you thread, but have to make a note: Radtexan, go up and click on that pumpkin in the 1st post... you will be in animated smiley heaven. :P
