I use hen saddle hackle - mostly because that's what is at hand. Don't tye a lot of crappie jigs. Some use saltwater strung hackle & neck hackle......

You can get the strung saddle already dyed or buy white and dye it yourself. I also tie flies and use some of the saddle hackle for palmering bodies or for a neck hackle.

I use whatever I have on hand at the time. Marabou looks cool on a neck palmered hackle but a little harder to tie. Practice make for perfection. ;)

I use the strung hackle for the most part use them for the tail material. I do tie a few patterns that I have to buy full necks and unfortunately they are Grizzly necks. Cost me more but the patterns are so deadly that I have to tie them on behind a tree. In the spring the crappies go nuts over them and will out fish any one with them. Sad part is that they are a killer pattern for a very few lakes in our area in the spring.

I have used hen hackle and do like to use the hackle from the big Chinese Streamer necks when available. Most of us use them hackle for tail material although some will use it as a hackle to wrap at the head. Just a hint do not use the hackle that has webbing at the base for tails use the longer straight hackle and you will have a good jig that will catch fish.
