Dang, only posole & menudo here is canned at Safeway. Can taste the MSG.

Out here in the wild west we have decent pho tho.

For do-it-yourself ethnic dishes, think you need inside coaching from multi-generational expertise to get it right?

It might help in the learning curve Keith,but Mrs Rad and I do multi international dishes,and some quite well If I do say so.Just takes a little knowledge,research,and some trial and error..

Recipe below is from Bueno...Mines pretty close except,I dont use the pigs feet.Ill "pop" the posole for 1/2
hour -45 min..1 1/2 # pork cubed and 1 1/2# beef cubed.Brown fist then add to boiling posole.all other is the same butI will add 1 container of chopped green chili.1/2 when i start it and other half when almost done.Total simmering time for me is closer to 4 hours.

Posole
This is a traditional Southwestern savory stew made with a specific variety of corn, pork and/or beef and red chile. It’s a hearty, authentic meal, perfect for the winter holidays.

7 BUENO® Chile Pods (stems & seeds
removed, pods rinsed)
6 small pigs’ feet
6 qts. water
1 lb. lean pork meat, bite-sized
1 32 oz. pkg. BUENO® Posole
2 medium onions, diced
6 cloves garlic, minced
4 tsp. granulated garlic
1 ½ Tbsp. salt
1 14 oz. container BUENO® Frozen Red Chile

Place chile pods, pigs’ feet and 3 qts. of water in an extra large (12 qt.) pot. Bring to a boil. Cover and cook for 1 hour over medium to medium-high heat.
Add pork and stew meat (including bones if any), posole and 3 more qts. water to pot. Bring to a slow boil. Cover and cook for 30 minutes over low to medium heat.
Add remaining ingredients. Bring to a slow boil. Cover and cook for 1 hour over low to medium heat, allowing flavors to blend. Makes twelve 16 oz. servings.
