Sure love fall. Always lots to harvest. I have tomatoes coming out of my ears. Tiny cherry, sweet sweet yellow pear, roma and big purple heriloom tomatoes. Dug all my potatoes last week and have them stored away. The blackberry plants are still producing nice fruit and even had a 2nd harvest of raspberries off a few plants this year which i have NEVER seen happen. Dug onions today and i should be set for a while.....



The pear tree has a bunch of good looking fruit this year too. Need to figure out what to do with my surplus.....

Attica still have some tomatoes going the hot peppers are producing the okra with the hot weather and little bit of rain has just exploded.The neighbors are loaded down too. This year the summer squash took off a second time. Even the late planted watermelons have football size fruit on again.

I have the fall garden planted mainly all the root crops. This year am trying cabbage and cauliflower will plant winter squash in a week. The elderberry are coming ripe so have been picking the ripe one every five days and making juice which will be turned into jelly. It takes a lot of elderberries to make a jar of jelly. I wish our blackberries would keep producing but the heat shuts them down quickly.

All in all I am with you the bounty from mother earth is very good. Two thumbs up on the onions time to dry them for a few weeks and bag them up.

Buzzy fillin the freezer with crappie, next will be dove, and then the deer better look out. I think we may even have some quail and a turkey er two...Fall is my favorite time of the year....

Very cool!! With all the rain this year the apple orchards are expecting surplus tons of apples. We'll hit a friends pick em orchard then peel and vacume pack.

Some of my grandparents used to buy a couple bushels of apples in the Fall. That had a little gizmo that you hand-cranked, it would spin the apple, and peel/core/spiral-slice all at the same time. Then they would just make one cut from stem to stern, separate out the rings, and dehydrate the apples. They would use them all winter long for pies and such.

redman - My garden is pretty humble compared to a lot of folks i know, but it sure is rewarding to give and take from the soil and know that my hands are responsible..... even if it is just a small portion of food for my family's table. Feels good to pass a little of my trial & error knowledge along to my son too. My daughter would rather walk to the store than get her nails dirty, but that is another story. :rolleyes:

Jig Man - You need to live a little closer and we could do some bartering, meat for veggies. It has been quite a few years since i've hunted and sure miss it. BBQ squirrel and squirrel stew are a great welcome to fall.

Fatman & AllenOK - I do need to figure out what to do with these pears. Me and the kids will eat a few of them fresh off the tree, but there will be a big pile go to waste since we really do not cook with them. The tree was on the property when we bought it...... i would have rather it be a peach or apple tree than pear. haha

Attica just a suggestion but if I had those pears I would do two things with them. The first would be to make spiced pears. You make the exactly like spiced apple rings only half the pears. The second thing I would make is pear butter made like apple butter. Mother gave me a recipe for making apple butter in the microwave. Have had some she made and it was very tasty to say the least.

Pear Tarts? You'll need fresh for that. I was going to mention "Pear Sauce" (think applesauce), but I really like Redman's suggestion of Pear Butter as a better alternative. Make a big batch of that, and can it. Wine-Poached Pears (dessert).

The Pear Brie sandwich sounds good! (I have odd tastes, being a cook). There's an Apple Pear sauce, a Pear Butter, a Ginger Pear Bread, a Gingerbread Pear muffin, a couple different Crisp recipes, a couple Pear bread recipes, a Cheddar Pear Pie, and lots more. If you're interested, I know of a few other recipe websites that might help your search :)

For the pears ....

Cut pears in quarters & core
Mix in one cup sugar, couple cinnamnum sticks, and some lemon rind
Add a bottle of clear corn liquor or vodka

Stick in the basement or cool place for six months shaking once every week.

Strain & add to mason jars

Sip slowly

I've done this with peaches, blueberries, and plums and then gave the smalles 1/2c mason jars full out for xMas gifts. I still get people who ask for it.
