Looks delicious. I've never had dove but we do the same as you with pheasant. What is really good it make a jalapeno popper then a slice of duck or goose then wrap in bacon and grill. Made a few dozen of those last weekend and they didn't last long! Damn.... now I'm hungry....

Was waiting for you ta chime in. My favorite part of the season is when the birds from your area make it here. They are larger and fatter than our local birds. Plus they are more of a challenge to shoot. They can dart and change directions on a dime and give ya nine cents change...

I haven't ever put onion in mine before.... May have to give that a spin next time!

And I'm gonna go pat the 20 gauge on the butt and tell it that the time is coming. Just got a long 3-4 months to wait yet!
